Gregory de St. Maurice’s Kyoto Recommendations
Greg received his PhD in Cultural Anthropology from the University of Pittsburgh in 2015. His key research interests include globalization, taste, “place” and place brands, culinary heritage and local foodways, and Japan. He is the Culinaria Research Fellow at the University of Toronto, the Air Liquide Chair at Fondation France-Japon at EHESS, and a Research Associate at the University of Pittsburgh and Ryukoku University. He also serves as Vice President of the Association for the Study of Food and Society.
